VINTAGE: 2006

SORT: 50% Pinela, 50 % Rebula

COLOUR: Intense and deep amber, with lovely shades of gold. Viscosity and a quiet jet form the first impression upon pouring the wine into the glass and also distinguish Valentino as a most special wine.

NOSE: A clear and pure aroma. Scents of white fruit jam and beeswax aromas are present, as well as those of cooked fruit and sweet spices.

TASTE: An intriguing collection of aromas is present in the mouth (dried apricots, hazelnuts, almonds and honey), the finish is long.

Despite the rich contents (alcohol, sugar, extract), the wine is complemented with enough acidity to invite you for another taste.

HARVESTING TECHNOLOGY: The harvest was carried out manually – only the noblest grapes were selected and picked off of each vine.

Valentino is made from dried grapes of Pinela and Ribolla. Only the best harvests from the best years are used.

The harvest starts in the middle of October and the grapes are put in wooden crates. These crates are then put in a dry and windy loft and naturally dried until april.

During this time, grapes turn into raisins – this taste is also present in the Valentino wine. Every grape is carefully inspected before crushing.

After a week of manual selection, the crushing of the grapes starts. Traditionally, Valentino grapes are being crushed at Easter.

A litre of Valentino is squeezed out of the initial thirty kilos of the picked and dried grapes. The wine is then poured into Slovene oak barrels and matured from one and a half to four years.

Valentino is bottled manually – every barrel individually, under a certain moon. Welcome to the Valentino fairytale.

BATIČ VALENTINO & FOOD: Valentino goes well with a slice of walnut or tarragon potica roll, chocolate and caramel sweets, as well as apple-poppy and walnut pastry. Sweets complemented with a coffee bean and a slice of dried orange make a most interesting combination with Valentino. Pairings with blue cheeses recommended.
